Creamy mango & banana overnight oats (serves 1)

Ingredients

For the mango puree:

1/2 mango

1 ripe banana

For the oat mix:

4 tablespoons gluten free oats

5 table spoons of unsweetened almond milk

2 tablespoons of plain soy- or coconut yogurt

2 tablespoons of chia seeds

1 tablespoon of maple syrup

Method

Peel the mango and banana and place them in a food processor with and a little milk, blend everything together and

Pour into a nice glass. Leave in the fridge or freezer until it is a bit hardened.

Mix oats, chia seeds, almond milk, yogurt and maple syrup and stir well. Leave for 10 minutes.

On top of the hardened mango puree, place the oat/ chia mix and place the glass in the fridge overnight.

Before enjoying for breakfast, decorate with a dollop of yogurt and a few walnuts!
