Raspberry, mango & quinoa smoothie

INGREDIENTS (Serves 1)

1 ripe banana

1/2 dl uncooked quinoa

Handful of frozen raspberries, about half a cup

2 handfuls of frozen mango

2 tablespoons soy- or coconut yoghurt (no flavor)

METHOD

  1. Rinse the quinoa in cold water. In a pot, use twice as much water as quinoa, then cook uncovered until the quinoa has absorbed all the water.

    Once the water is all absorbed, remove the pot from heat, cover it and let the quinoa steam for 5 minutes. Leave to cool down.

  2. Once the quinoa has cooled down, rinse the frozen mango in hot water for a second (makes it easier to blend)

  3. Place all of the ingredients into a blender or food processor.

  4. Pulse until smooth - adding a dash of almond milk if needed.

  5. Decorate with chopped coconut flakes, chia seeds and strawberry, or whatever you prefer (optional)!
