Carrot cake overnight oats
Ingredients (serves 1)
1/2 cup old fashioned/ rolled gluten free oats
1 medium sized carrot, peeled and grated
1 teaspoon cinnamon
1/2 teaspoon cardamom
1 tablespoon chia seeds
1 1/2 tablespoon raisins
1/2 teaspoon vanilla powder
1 tablespoon maple syrup
1/2 cup unsweetened almond milk
2 tablespoons no flavour yoghurt (I use soy yoghurt)
Method
Mix all ingredients together and leave in bowl (room temperature) for 5-10 min for the oats to soak up the milk. Transfer to a beautiful glass you want to serve this in.
Cover and leave in the refrigerator overnight. Decorate with a dollop of yogurt and a few walnuts. before serving
