Cauliflower pizza with figs and ham

Ingredients (serves 2-3)

Crust:

  • 1 cauliflower, cut in smaller florets

  • 2 eggs

  • 2 tablespoons coconut oil (neutral)

  • 1 dl grated hard goats cheese or Halloumi

  • 1/2 dl finely chopped fresh herbs (e.g. Basil or Thyme)

  • 1/2 teaspoon salt

Sauce:

  • 1.5 dl coconut yogurt (not flavored)

  • 2 garlic cloves, finely chopped

  • 1 dl finely chopped fresh herbs

  • Salt & pepper to taste

Topping:

  • 8 pieces of thinly sliced ham (I prefer Jamón Serrano or Jamón Ibérico)

  • 1/2 red onion, thinly sliced

  • 2 spring onions, chopped

  • 1 fresh fig, sliced

Method

Preheat oven to 225 degrees Celsius.

Place all the ingredient of the crust in a food processor and pulse well. Cover a rimmed baking sheet with parchment paper and form a pizza crust.

Bake the crust for 15 min

While the crust bakes, make the sauce. Simply mix all the ingredients together.

Top the pre-baked crust with the sauce and then the topping.

Bake for another 10 min.
