Green chia pudding a-la goop
Ingredients (one serving)
1 soft date, pitted (I use Rotab)
1 handful of spinach
1 cup nutmilk of choice (I used a combination of cashew and coconut)
1/4 cup chia seeds
salt
TO SERVE:
blueberries
toasted coconut
Method
Add the date, spinach and nondairy milk to a powerful blender and blitz until the spinach is completely blended and there are no more leafy bits. In a beautiful glass, add the spinach mixture, the chia seeds, and a pinch of salt; mix to combine. Let set in the fridge overnight.
Top with blueberries and toasted coconut.
