Raw Hazelnut “chocolate” cake

This deliciously rich and chocolaty cake is my current favourite indulgence. The reciepe is from the fabulous Oslo Raw, I highly receommend following their IG account osloraw for more recipes and raw food inspiration!

Ingredients

Base

3 dl pecan nuts

2 dl raw cocoa powder

2 tbsp coconut sugar

15-20 small dates (I use Rotab) pitted

1/2 tsp sea salt (or Himalaya)

Chocolate cream

4 dl cocnut cream

2 dl hazelnut butter

8 tbsp raw cocoa powder (or more if you prefer)

1.5 tbsp coconut sugar

4 small dates (pitted)

1.5 dl melted coconut oil

4 tbsp maple syrup

1 tsp vanilla powder

1/2 tsp sea salt (or Himalaya)

Method

Base

Place all of the ingredients into a powerful blender and blend until a sticky dough forms. Add a splash of nutmilk if you think the dough is too dry. Press the dough in a cake tin lined with parchement paper.

Chocolate cream

Place all of the ingredients into a powerful blender and blend until smooth. Pour ovver the dough and place in the freezer until hardened.
