Paola’s Papilla Soup
I looove this creamy, warming, nurturing, hugging soup! It´s from Health and Wellness Coach Paola Atlason with whom I have had the true pleasure of working with the last 8 weeks. Through her customized nutrition and self-care plan she has not only taught me how to eat to look and feel more youthful, release weight and inflammation, she has introduced me to Stress Management and Lymphatic Detoxification Techniques I was not aware of. Ingredients:
32oz low sodium chicken stock
2 fennels OR one head of cauliflower
3 carrots
1 cup squash (Kabocha, summer squash or spaghetti squash)
4 celery stalks
3 cups spinach
1/2 cup parsley
1/2 cup cilantro
a 2” knob of ginger,
3 boneless and skinless chicken thighs (optional)
Sea salt and pepper to taste
If you need more liquid to cover the vegetables - add water
Method:
1. In a large pot add all the ingredients and boil until everything is soft - about 30-40min.
2. Turn the heat off and let the ingredients sit in the broth until they cool down for about 10-15min.
3. Use an immersion blender and blend until creamy.
4. To serve, pour one serving (about 2 cups) into a large bowl. Drizzle with 1tb go good olive oil and an extra cracking of black pepper.
5. Serve with a palmful of protein of choice should your soup not include chicken :)
